Exclusive Precision Edge Technology
WÜSTHOF’S Precision Edge Technology, PEtec, offers superior blade sharpness and has set the new standard for modern cutlery.
Conventionally hand-sharpened knives are plagued by irregularities that diminish the blade’s sharpness and overall performance. Through a proprietary process inclusive of computer-controlled robotics, WÜSTHOF’S PEtec yields a smoother, more refined edge with dramatically increased sharpness and sharpness retention along the entire length of the blade. The result is a knife with a definitive advantage for every home or professional chef.
- Before sharpening, the blades are measured using lasers to ensure accuracy
- Computers calculate the precise sharpening angle for each blade
- Precision robots sharpen the blades on a whetstone
- The knives are given a final polish using a specialized disc
- The quality of forged WÜSTHOF knives produced using the PEtec process is significantly higher than that produced by the standard manual sharpening process.
- Extremely high cutting performance with a 20% sharper edge
- Doubles the edge retention
- Optimum cutting edge along the entire length of the blade
- Unique, consistently high and reproducible quality
The Classic 7-pc set has a double bolster design which give it a professional-style heft and exceptional balance and is good-looking. The handles are made of a synthetic material, which is highly durable for a long-lasting knife. Polyoxymethylene (POM) is an engineering thermoplastic used in precision parts requiring high stiffness, low friction, and excellent dimensional stability. POM resists fading and discoloration of the knife handle. The handle’s elegant shape is designed for a comfortable grip.
CLEANING AND STORING OF YOUR KNIVES
Always be careful when handling any knife as the blades are shape and can easily cause an injury, as these are some of the sharpest cooking knives available.
You should always hand wash these knives, using the dishwasher is not a good idea. These knives are high quality and top of the line so treat them as such.
Use a clean cloth and a mild detergent and warm water. If treated properly these knives will serve your needs for many years to come. They are designed to be treated with respect.
Store your knives the proper way to keep the edges sharp and ready to cut, chop, dice or peel any food you choose. Always make sure they are completely dry before you put them away. This 7-pc set comes with a six-slot slim line block. This will not take a lot of space on your countertop but is an excellent place for storing your knives. Two magnetic holders are another method of storage. If you have limited space, this may a good option as the can be hung on the wall or place on a flat surface such as a drawer. The magnets will hold the knives apart from each other so the edges do not get dull. If you like to take your knives with you when you are away from home, a knife case or knife roll can protect you knives as you take them from place to place.
KEEPING YOUR KNIVES AT THEIR BEST.
There is a method called honing, which calls for a tool which is made of steel and called a honing tool. This method will maintain your knives by realigning the microscopic teeth along the blade. It is best if you read the instruction on how to do this properly. There are instructional videos on the internet.
Sharpening is different from honing. There are different methods of sharpening a knife. Sharpening removes a small amount of the edge using sharpening steel. As these knives are precision blades, I recommend you learn using something other than a Wusthof knife. There are also videos on the internet to help you learn.
